A journey that has shown me the importance of maintaining authenticity and quality, especially in a world where most if not all producers have compromised these values. We’ve seen renowned chai makers abandon their roots for mass production, resorting to tea extracts and spice oils, sacrificing health benefits, flavor and integrity. It’s disheartening to watch those who have once inspired us move towards cheaper, inferior methodology, and centrifugal processed sugars; but it only strengthens our resolve to do things differently. We remain steadfast in our commitment to crafting the highest chai. We use only the best whole organic ingredients, each chosen for its superior flavor and purity. We refuse to cut corners. Our chai is not a "working person’s chai" nor intended to be. But rather—an uncompromising dedication to mythic level excellence in every bottle.​

Why We Choose Organic Assam Broken Orange Pekoe (BOP) Over Traditional Cut Tear And Curl (CTC) For us, crafting chai is about more than just tradition; it’s about sophistication. We cater to a refined palate that demands complexity and depth, and Organic Assam BOP delivers on that promise. It’s the ideal choice for our high-end chai, offering a luxurious experience that justifies our premium pricing. So, while CTC might be great for a quick, punchy chai, BOP is for those who savor every sip and understand that the best things in life are worth the extra time and effort. With BOP, you still get that robust, malty foundation that Assam tea is famous for, but with a layer of refinement that elevates the entire chai experience. BOP leaves retain more of their natural oils, giving the tea a richer aroma and smoother texture, perfect for those who appreciate the finer things in chai.

Why We Use Organic Peruvian Ginger Instead of Chinese Ginger Our choice of Peruvian ginger is driven by its clean, smooth flavor profile.  Chinese ginger has a sharper, more citrusy taste with woodsy pine notes. Peruvian ginger offers a milder, fresher flavor that blends seamlessly with our spices. Additionally, Peruvian ginger is rarer and subject to import tariffs, which makes it more expensive but worth the investment for its superior quality and flavor.

Why We Use Organic Guatemalan Cardamom Instead of Indian Cardamom Guatemalan cardamom is our choice for its delicate, slightly tropical notes that add a refreshing brightness to our chai. Indian cardamom, while more common, has a stronger, menthol-like flavor that can be overpowering. The subtler, more bright aromatic qualities of Guatemalan cardamom allow for a more refined and elegant flavor, and allow us to use more which is essential in creating a chai that stands out without subtile menthol notes.. Guatemalan cardamom is also rarer and incurs higher import tariffs, contributing to its higher cost but ensuring a unique and refined taste.

Why We Use Organic Colombian Panela Instead of Jaggery or lesser sugars Colombian panela offers a rich, caramel-like sweetness with a mineral complexity that enhances the overall flavor of our chai. Unlike jaggery, which can sometimes have a more earthy or slightly bitter taste, panela provides a smoother, more balanced sweetness. This allows the spices and tea to shine without being overshadowed by the sweetener. Colombian panela is machete cut, hand pressed, and artesinaly evaporated. Also more rare and expensive due to import tariffs, but its superior quality justifies the cost.

Why We Use Organic Cassia Cinnamon Instead of Ceylon Cinnamon Cassia cinnamon, with its bold, spicy, sweet, warmth, is the perfect choice for our chai. Ceylon cinnamon, while excellent in savory curries, is milder and lacks the depth and intensity needed in a robust chai. Our use of Red Ape cassia cinnamon not only ensures a richer flavor but also supports a worthy cause—part of their profits go towards saving orangutans, making every sip of our chai a step towards furthuring their conservation effort.

Why We Source Organic Cloves, Nutmeg, Black Pepper and Star Anise from Sri Lanka These spices we use are sourced from Sri Lanka because of the superior quality and unique terroir that this region offers. Sri Lankan cloves, nutmeg, black pepper and Star Anise are renowned for their high essential oil content, which translates into more intense and vibrant flavors. These spices add a layer of complexity to our chai that is unmatched by those from other regions.

The Importance of Terroir Terroir plays a crucial role in the flavor development of our ingredients. The unique combination of soil, climate, and altitude in each of our ingredient’s regions contributes to the distinct flavors that define our chai. It’s this alchemy of the living earth that inspires us in out selections, ensuring that each sip of our chai is a true reflection of its mythic origins.

By choosing organic, we avoid synthetic pesticides, herbicides, and fertilizers that can affect both the flavor and health benefits of our ingredients.
